Ingredients

2 Cucumbers (Persian, English, or Waxy)

2 Roma tomatoes (or cherry tomatoes)

1 Red onion

2 tbsp Apple cider vinegar

1 tsp Granulated sugar

1 tsp Kosher salt (to taste)

1/2 tsp Black pepper (to taste)

2 tbsp Fresh dill (for garnish)

Feta cheese (optional)

1 Avocado (optional)

Instructions

  • In a large bowl, combine sliced cucumbers, tomatoes, and red onions.

  • In a jar, mix water, apple cider vinegar, sugar, salt, and pepper. Shake for about 10 seconds.

  • Pour the dressing over the vegetables and toss to coat evenly.

  • Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
