These Dark Chocolate Raspberry Pie Bars feature a buttery crust, a sweet raspberry filling with fresh berries, rich dark chocolate chips, and a crumbly oat streusel topping. Perfect for any dessert table or casual treat!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup seedless raspberry jam
  • 1 cup fresh raspberries
  • 1/2 cup dark chocolate chips
  • 3/4 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, cold, cut into cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, mix 1 1/2 cups flour, granulated sugar, and melted butter until crumbly. Press the mixture evenly into the prepared pan to form the crust.
  3. Spread raspberry jam over the crust. Sprinkle fresh raspberries evenly over the jam. Scatter dark chocolate chips on top.
  4. In another bowl, combine 3/4 cup flour, oats, and brown sugar. Add cold cubed butter and use a pastry cutter or your fingers to mix until the mixture forms coarse crumbs.
  5. Sprinkle the streusel topping evenly over the filling layer.
  6. Bake for 30-35 minutes or until the streusel topping is golden brown.
  7. Allow bars to cool completely in the pan on a wire rack. Once cooled, lift out using parchment overhang and cut into squares.

  • For extra richness, drizzle melted chocolate over the top after baking.
  • You can substitute raspberry jam with other berry jams like blackberry or strawberry.
