Ingredients

  • 1 cup almond butter
  • 1/2 cup pitted dates, chopped
  • 1/4 cup oats (certified gluten-free if needed)
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking soda
  • Pinch of salt

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a food processor, blend the chopped dates until they form a sticky paste.
  • In a large bowl, mix together the almond butter, date paste, oats, vanilla extract, baking soda, and salt.
  • Stir until the dough is well combined. If it feels too sticky, refrigerate it for about 15 minutes.
  • Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, then flatten slightly with a fork or your fingers.
  • Bake for 8-10 minutes, or until the edges are golden.
