This moist and flavorful date cake is infused with warm spices and naturally sweetened with dates. Topped with a luscious caramel glaze, it’s a rich, comforting dessert perfect for holidays or any special occasion.

Ingredients

  • 1 cup (240ml) boiling water
  • 1 1/2 cups (225g) chopped dates
  • 1/2 tsp baking soda
  • 1 1/4 cups (156g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • Caramel Glaze:
  • 1/2 cup (113g) unsalted butter
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (100g) light brown sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  2. In a heatproof bowl, pour boiling water over chopped dates and stir in baking soda. Let sit for 15 minutes.
  3. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. In a large bowl, cream together butter and brown sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  6. Gradually add dry ingredients, mixing until just combined.
  7. Stir in the date mixture until fully incorporated.
  8. Pour batter into prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool cake in pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the caramel glaze, combine butter, cream, brown sugar, and salt in a saucepan. Bring to a boil, then reduce heat and simmer for 2–3 minutes, stirring constantly. Remove from heat and stir in vanilla extract.
  11. Pour warm caramel glaze over cooled cake. Let set before serving.

Notes

  • Use Medjool dates for a richer, more caramel-like flavor.
  • Cake can be made a day ahead and stored at room temperature.
  • Serve with a scoop of vanilla ice cream or whipped cream for extra indulgence.
