Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup caramel bits or chopped caramel candies
  • Sea salt, for sprinkling

Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix the wet ingredients: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy. Beat in the eggs, one at a time, followed by the vanilla extract.
  3. Combine the dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Add dry to wet: Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  5. Add caramel bits: Fold in the caramel bits or chopped caramel candies.
  6. Form the dough: Scoop tablespoon-sized portions of dough and roll into balls. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake: Bake in the preheated oven for 10-12 minutes or until the edges are golden brown, but the centers are still soft.
  8. Finish with sea salt: After removing the cookies from the oven, sprinkle each with a pinch of sea salt while they’re still warm.
  9. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra caramel flavor, you can drizzle the cookies with warm caramel sauce once they’ve cooled.
  • Make sure to use soft caramel bits or candies to ensure they melt evenly into the dough.
