Delicious Breakfast Egg Muffins are a protein-packed, customizable, and easy-to-make breakfast perfect for meal prep or busy mornings.

Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped bell peppers
  • 1/4 cup chopped onion
  • 1/2 cup chopped spinach
  • 1/2 cup shredded cheese
  • 1/2 cup cooked bacon or sausage (optional)
  • Olive oil or cooking spray (for greasing)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a muffin tin with olive oil or cooking spray.
  2. In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  3. Stir in the chopped bell peppers, onion, spinach, cheese, and cooked meat if using.
  4. Evenly divide the egg mixture among the muffin cups, filling each about three-quarters full.
  5. Bake for 18–22 minutes, or until the muffins are set in the center and lightly golden on top.
  6. Remove from the oven and let cool for a few minutes before removing them from the muffin tin.
