These Delicious Cherry Pie Bites are the perfect mini dessert for cherry lovers! With a buttery, flaky crust and a sweet, tangy cherry filling, they’re ideal for parties, picnics, or whenever you want a portable treat. Easy to make and irresistible, these bite-sized pies will be a crowd favorite!

Ingredients

  • For the Crust:
  • 1 package refrigerated pie crusts (or homemade, if preferred)
  • 1 tablespoon granulated sugar (for sprinkling)
  • For the Cherry Filling:
  • 2 cups fresh or frozen cherries, pitted and chopped
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • For the Egg Wash:
  • 1 egg, beaten (for brushing on the crust)

Instructions

  • Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare the filling: In a medium saucepan, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon (if using). Cook over medium heat, stirring occasionally, until the mixture thickens and the cherries soften, about 5-7 minutes. Remove from heat and let it cool slightly.
  • Prepare the pie crusts: Roll out the pie crusts on a lightly floured surface. Use a round cutter or a glass to cut out circles, approximately 3 to 4 inches in diameter.
  • Assemble the cherry pie bites: Place a spoonful of the cherry filling in the center of each pie crust circle, leaving a little room around the edges. Fold the crust in half over the filling, forming a half-moon shape, and gently press the edges with a fork to seal. Brush the top of each pie bite with the beaten egg for a golden finish. Sprinkle a little granulated sugar on top for added sweetness and crunch.
  • Bake: Arrange the pie bites on the prepared baking sheet, leaving space between each one. Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and the filling is bubbly.
  • Cool and serve: Allow the cherry pie bites to cool slightly before serving. They’re best enjoyed warm, but they can also be eaten at room temperature.
