Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste
  • Paprika (for garnish)
  • Optional: 1 tablespoon finely chopped chives or pickles for extra flavor

Instructions

  • Hard-boil the eggs: Place the eggs in a saucepan and cover with water. Bring to a boil over medium-high heat, then reduce the heat to low and let them simmer for about 10-12 minutes. Once cooked, transfer the eggs to an ice bath to cool.
  • Peel the eggs: After the eggs have cooled, peel them carefully, ensuring the whites stay intact.
  • Cut and remove yolks: Slice each egg in half lengthwise and remove the yolks. Place the yolks in a bowl.
  • Prepare the filling: Mash the yolks with a fork, then add mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth and creamy. For extra flavor, you can add chopped chives or pickles at this stage.
  • Fill the egg whites: Spoon or pipe the yolk mixture back into the egg whites.
  • Garnish and serve: Sprinkle with paprika for color and an extra hint of flavor. Serve immediately or refrigerate until ready to serve.

Notes

  • For a creamy texture, feel free to adjust the mayonnaise quantity to suit your taste.
  • You can use a piping bag for a more elegant presentation.
  • Adding a little pickle relish can give a tangy kick to the filling.
