Ingredients

  • For the Pastry:
  • 2 ½ cups (315g) all-purpose flour
  • ½ tsp salt
  • ½ cup (115g) cold unsalted butter, cubed
  • ⅓ cup (80ml) cold water
  • 1 tsp turmeric or curry powder (for color)
  • For the Beef Filling:
  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 Scotch bonnet pepper, finely chopped (optional, for heat)
  • 1 tsp dried thyme
  • 1 tsp allspice
  • 1 tsp curry powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil
  • ¼ cup beef broth or water
  • 2 scallions, chopped

Instructions

  • Make the Pastry:
  • In a bowl, combine flour, salt, and turmeric/curry powder.
  • Cut in cold butter until mixture resembles coarse crumbs.
  • Gradually add cold water and knead gently until dough forms. Wrap in plastic and chill for 30 minutes.
  • Prepare the Filling:
  • Heat oil in a skillet over medium heat. Sauté onions, garlic, and Scotch bonnet pepper until fragrant.
  • Add ground beef and cook until browned.
  • Stir in thyme, allspice, curry powder, paprika, salt, and pepper.
  • Pour in broth and simmer until mixture thickens. Stir in scallions and remove from heat.
  • Assemble the Patties:
  • Preheat oven to 375°F (190°C).
  • Roll out dough on a floured surface and cut into 6-inch circles.
  • Place a few tablespoons of beef filling on one half of each circle.
  • Fold dough over to form a half-moon shape and seal edges by pressing with a fork.
  • Place patties on a baking sheet lined with parchment paper. Brush tops with beaten egg for a golden finish.
  • Bake:
  • Bake for 25-30 minutes or until golden brown and flaky.

Notes

  • Adjust the heat by omitting or reducing Scotch bonnet pepper.
  • For a vegan version, substitute beef with seasoned lentils or vegetables.
  • Freeze uncooked patties for up to 1 month. Bake directly from frozen, adding extra baking time.
