This Dreams Crème Brûlée is a rich and creamy classic French dessert featuring a smooth vanilla custard base topped with a crisp layer of caramelized sugar. Simple to make with only a few ingredients, it’s an elegant treat perfect for any special occasion.

Ingredients

  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 5 egg yolks
  • 1/2 cup granulated sugar
  • Additional granulated sugar for topping

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and vanilla extract over medium heat until it just begins to simmer. Remove from heat and set aside.
  3. In a mixing bowl, whisk the egg yolks and 1/2 cup sugar until well blended and slightly thickened.
  4. Slowly pour the warm cream into the egg mixture, whisking constantly to prevent the eggs from curdling.
  5. Strain the mixture through a fine mesh sieve into a large measuring cup or bowl for easy pouring.
  6. Divide the custard mixture evenly among 4 to 6 ramekins.
  7. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins (water bath).
  8. Bake for 40 to 45 minutes, or until the custards are set but still slightly jiggly in the center.
  9. Remove ramekins from the water bath and cool to room temperature. Then refrigerate for at least 2 hours or overnight.
  10. When ready to serve, sprinkle a thin, even layer of granulated sugar on top of each custard.
  11. Using a kitchen torch, caramelize the sugar until golden and crisp. Alternatively, place under a broiler to melt the sugar.
  12. Let the caramelized tops cool for a minute before serving.

Notes

  • Be careful not to overheat the cream to avoid curdling the eggs.
  • For best results, use a kitchen torch for the topping.
  • You can infuse the cream with other flavors like citrus zest or espresso.
  • Chill the custard thoroughly before adding the sugar topping.
