These Easy Almond Croissant Blondies are the perfect blend of buttery croissant layers and almond flavor in a chewy, decadent blondie. Made with simple ingredients, they’re an irresistible treat for any occasion.

Ingredients

  • For the Blondies:
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup croissant crumbs (about 23 croissants, torn into pieces)
  • ½ cup sliced almonds
  • ¼ cup almond flour (optional, for extra almond flavor)
  • For the Almond Glaze (optional):
  • ½ cup powdered sugar
  • 2 tbsp almond milk (or regular milk)
  • ½ tsp almond extract

Instructions

  • Preheat oven to 350°F (175°C). Grease and line an 8×8-inch square baking pan with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, mix together melted butter and brown sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  • Add the dry ingredients to the wet mixture and fold until just combined.
  • Gently fold in croissant crumbs, sliced almonds, and almond flour (if using).
  • Pour the batter into the prepared pan, spreading evenly.
  • Bake for 25–30 minutes, or until the top is golden and a toothpick inserted comes out clean.
  • Remove from oven and cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Optional: While blondies are cooling, mix together powdered sugar, almond milk, and almond extract to make the glaze. Drizzle over the cooled blondies for extra almond flavor.

Notes

  • For a stronger almond flavor, you can increase the almond extract in both the batter and glaze.
  • Leftovers can be stored in an airtight container at room temperature for up to 3 days.
  • For an extra touch, sprinkle some chopped almonds over the top before baking.
