Easy Cheesy Ranch Potatoes are a comforting side dish made with baby red potatoes, ranch seasoning, and gooey melted cheese—perfect for potlucks, holidays, or a cozy family dinner.

Ingredients

  • 2 pounds baby red potatoes, quartered
  • 2 tablespoons olive oil
  • 1 (1 oz) packet dry ranch seasoning mix
  • 1 ½ cups shredded cheddar cheese
  • ½ cup crumbled cooked bacon (optional)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, toss the quartered potatoes with olive oil and dry ranch seasoning until evenly coated.
  3. Spread the potatoes in an even layer in the prepared baking dish.
  4. Bake uncovered for 25-30 minutes, or until potatoes are tender and lightly golden.
  5. Remove the dish from the oven, sprinkle the shredded cheddar cheese evenly over the potatoes.
  6. Return to the oven and bake for an additional 5-7 minutes, or until cheese is melted and bubbly.
