This comforting and easy-to-make chicken cobbler casserole features tender chicken, vegetables, and a savory biscuit topping—perfect for a quick, hearty family meal!

Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 1 ½ cups frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for greasing)
  • 1 package (8 oz) refrigerated biscuit dough (like Pillsbury Grands)
  • 1 cup shredded cheddar cheese
  • Fresh parsley (optional, for garnish)

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil.
  • Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until the ingredients are well combined.
  • Assemble the Casserole: Pour the chicken mixture into the prepared baking dish, spreading it out evenly. Sprinkle the shredded cheddar cheese over the top.
  • Add the Biscuit Topping: Tear the biscuit dough into small pieces and scatter them over the top of the chicken mixture. It’s okay if some parts of the filling are exposed; the biscuits will puff up and form a golden topping.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and cooked through. You can insert a toothpick into the center of the biscuits to ensure they are fully cooked.
  • Serve: Remove from the oven and let the casserole sit for a few minutes before serving. Garnish with fresh parsley if desired.
