These Easy Cucumber Bites are a light, refreshing, and delicious appetizer perfect for any occasion. Crisp cucumber slices topped with a creamy spread and garnished with fresh herbs create a bite-sized snack that’s both healthy and flavorful. Ideal for parties, BBQs, or a quick snack, these cucumber bites are an effortless way to impress your guests with minimal effort!

Ingredients

  • 1 cucumber, sliced into 1/4-inch thick rounds
  • 4 oz cream cheese, softened
  • 2 tbsp Greek yogurt (or sour cream)
  • 1 tbsp fresh dill, chopped (or parsley)
  • 1 tsp lemon juice
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • Cherry tomatoes, halved (optional, for garnish)
  • Fresh dill sprigs (optional, for garnish)

Instructions

  • Slice the cucumber into 1/4-inch thick rounds and arrange them on a platter.
  • In a small bowl, combine the cream cheese, Greek yogurt (or sour cream), chopped dill, lemon juice, garlic powder, salt, and pepper. Mix well until smooth.
  • Spoon or pipe a dollop of the cream cheese mixture onto each cucumber slice.
  • Optional: Top each bite with a halved cherry tomato for extra flavor and color.
  • Garnish with fresh dill sprigs if desired.
  • Serve immediately or chill until ready to serve.

Notes

  • For extra flavor, try adding a drizzle of olive oil or balsamic glaze on top of the cucumber bites before serving.
  • If you don’t have fresh dill, parsley or chives can be used as a substitute.
  • These can be made ahead of time and refrigerated until ready to serve, but it’s best to add the tomatoes just before serving to keep them fresh.
