This Easy Lemon Cobbler is a refreshing and light dessert with a tangy lemon flavor and a fluffy, biscuit-like topping. Perfect for spring and summer, this dessert is simple to make and combines the bright zest of lemon with a sweet, buttery crust. Ideal for a quick treat that’s sure to impress!

Ingredients

  • 1/2 cup (1 stick) unsalted butter (melted)
  • 1 cup granulated sugar (divided)
  • 1 tablespoon lemon zest
  • 1/2 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 cup milk (whole or 2%)
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • Optional: powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar-sized casserole dish.
  2. Pour the melted butter into the prepared baking dish, ensuring the bottom is fully coated.
  3. In a medium bowl, combine 3/4 cup of granulated sugar, lemon zest, lemon juice, and milk. Stir until the sugar dissolves.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and the remaining 1/4 cup of sugar.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. The batter will be slightly lumpy.
  6. Pour the batter over the melted butter in the baking dish (do not stir). The butter will rise to the top as it bakes, creating the cobbler crust.
  7. Bake for 40-45 minutes, or until the top is golden and bubbly, and a toothpick inserted into the center comes out clean.
  8. Let the cobbler cool for a few minutes before serving. Optionally, dust with powdered sugar for an extra touch of sweetness.
  9. Serve warm, either on its own or with a scoop of vanilla ice cream or whipped cream.
