This Easy Mediterranean Baked Mackerel Fish recipe is a flavorful and healthy dish, featuring whole mackerel marinated in a zesty blend of olive oil, lemon juice, garlic, and herbs, then baked to perfection with onions, tomatoes, and bell peppers.

Ingredients

  • 2 whole mackerel fish (cleaned and gutted)
  • 1 large onion (sliced)
  • 1 large tomato (sliced)
  • 1 bell pepper (sliced)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Clean and pat dry the mackerel fish.
  3. In a bowl, mix olive oil, lemon juice, garlic, paprika, oregano, black pepper, and salt to make a marinade.
  4. Rub the marinade all over the fish and let it sit for 10–15 minutes.
  5. In a baking dish, layer sliced onions, tomatoes, and bell peppers.
  6. Place the marinated fish on top of the vegetables.
  7. Drizzle any remaining marinade over the fish and vegetables.
  8. Bake in the preheated oven for 25–30 minutes or until the fish is cooked through and flaky.
  9. Garnish with fresh parsley and serve warm.

Notes

  • You can use fillets instead of whole fish if preferred.
  • Add olives or capers for an extra Mediterranean touch.
  • Best served with rice, potatoes, or a fresh salad.
