These Easy Mini Quiches are perfect bite-sized snacks or appetizers made with a simple mixture of eggs, cheese, and your favorite fillings, all baked in mini muffin tins. Great for parties, brunches, or quick breakfasts on the go.

Ingredients

  • 1 (12 ounce) package refrigerated biscuit dough
  • 1 cup shredded Cheddar cheese
  • ½ cup chopped onion
  • ½ cup chopped ham
  • 4 eggs
  • ½ cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a mini muffin pan.
  2. Separate the biscuit dough and divide each biscuit in half. Press each half into the bottom and up the sides of the muffin cups to form a crust.
  3. In a bowl, mix together the cheese, onion, and ham. Spoon the mixture into the biscuit-lined muffin cups.
  4. In a separate bowl, beat the eggs with milk, salt, and pepper. Pour the egg mixture over the ham mixture in each cup, filling to just below the top.
  5. Bake in the preheated oven until a knife inserted into the center comes out clean, about 20 to 25 minutes.
  6. Allow to cool slightly before removing from the muffin tin. Serve warm.

Notes

  • You can customize the filling with cooked bacon, vegetables, or different cheeses.
  • These mini quiches freeze well and can be reheated in the microwave or oven.
  • Use silicone muffin pans or paper liners for easier removal.
