This Easy Patatas Bravas recipe features crispy roasted potatoes topped with a smoky, slightly spicy tomato sauce. It’s a classic Spanish tapas dish that’s simple to prepare at home.

Ingredients

  • 2 pounds Yukon Gold or Russet potatoes, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil, divided
  • 1/2 teaspoon kosher salt
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 (15-ounce) can crushed tomatoes
  • Fresh chopped parsley, for garnish (optional)

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. In a large bowl, toss the chopped potatoes with 2 tablespoons of olive oil and 1/2 teaspoon kosher salt.
  3. Spread the potatoes on the prepared baking sheet in a single layer and roast for 40 to 45 minutes, flipping halfway through, until golden and crispy.
  4. While the potatoes roast, heat 1 tablespoon olive oil in a saucepan over medium heat. Add the chopped onion and sauté for 5 minutes until soft.
  5. Add minced garlic, smoked paprika, cayenne, sugar, and salt. Cook for 1 minute until fragrant.
  6. Pour in the crushed tomatoes, bring to a simmer, and cook for 10–15 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Blend the sauce with an immersion blender or transfer to a blender for a smoother texture (optional).
  8. Once the potatoes are roasted, transfer them to a serving plate and spoon the sauce over the top.
  9. Garnish with chopped parsley if desired and serve warm.

Notes

  • Adjust the amount of cayenne pepper to control the spice level.
  • For an extra crispy texture, soak the potatoes in cold water for 30 minutes before roasting.
  • The tomato sauce can be made ahead and stored in the fridge for up to 3 days.
  • Serve as a side dish or as part of a tapas spread.
