Ingredients

  • 20 large white button mushrooms, stems removed and chopped
  • 1/2 cup cooked crab meat (fresh or canned)
  • 1/2 cup cooked shrimp, chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Add chopped mushroom stems and garlic, sauté for 3-4 minutes until soft.
  • Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  • In a bowl, combine sautéed mushroom stems and spinach, crab meat, shrimp, cream cheese, Parmesan, mozzarella, smoked paprika, salt, and pepper. Mix well until creamy and combined.
  • Spoon the mixture generously into each mushroom cap. Place stuffed mushrooms on a baking sheet lined with parchment paper.
  • Bake for 18-20 minutes or until mushrooms are tender and tops are golden and bubbly.
  • Garnish with fresh parsley before serving warm.
