Ingredients
2 English muffins, split in half
4 large eggs
1/2 cup shredded mozzarella cheese (or cheese of your choice)
2 tbsp butter or olive oil
1/4 cup cooked breakfast sausage or bacon (optional)
1/4 cup sliced bell peppers (optional)
1/4 cup sliced mushrooms (optional)
1/4 tsp garlic powder (optional)
Salt and pepper to taste
Fresh herbs like parsley or chives (optional, for garnish)
Instructions
Preheat Oven:
Preheat your oven to 375°F (190°C). You can also use a toaster oven for convenience.
Prepare the English Muffins:
Split the English muffins in half and place them on a baking sheet, cut side up. Toast the muffin halves in the oven for 5-7 minutes, until golden and lightly crispy.
Cook the Eggs:
While the muffins are toasting, heat a nonstick skillet over medium heat and melt the butter or add olive oil.
Crack the eggs into the skillet, one at a time. Cook to your desired doneness (sunny side up, scrambled, or over-easy).
Season with salt, pepper, and garlic powder if desired. You can also add cooked breakfast sausage or bacon to the skillet to warm through.
Assemble the Pizzas:
Once the English muffins are toasted, remove them from the oven.
Top each muffin half with a little shredded cheese. If you’re adding vegetables (like bell peppers or mushrooms), layer those on top of the cheese.
Place one cooked egg on top of each muffin half.
Bake the Breakfast Pizzas:
Return the muffins to the oven for another 5-7 minutes or until the cheese is melted and bubbly, and the egg is cooked to your liking.
Serve and Garnish:
Remove the English muffin pizzas from the oven and let them cool for a moment.
Garnish with fresh herbs like parsley or chives if desired. Serve immediately.
Notes
Feel free to customize these breakfast pizzas with your favorite toppings such as ham, spinach, or tomatoes.
You can use pre-cooked sausage or bacon for a quicker option, or add other breakfast vegetables like onions or spinach.
If you like a crispy crust, you can broil the muffins for 1-2 minutes after baking.
