This English Muffin Breakfast Pizza is a quick, easy, and tasty breakfast option. Topped with eggs, cheese, and your favorite breakfast ingredients, it’s the perfect combination of savory flavors to start your day off right!

Ingredients

  • 2 English muffins, split in half
  • 4 large eggs
  • 1/2 cup shredded mozzarella cheese (or cheese of your choice)
  • 2 tbsp butter or olive oil
  • 1/4 cup cooked breakfast sausage or bacon (optional)
  • 1/4 cup sliced bell peppers (optional)
  • 1/4 cup sliced mushrooms (optional)
  • 1/4 tsp garlic powder (optional)
  • Salt and pepper to taste
  • Fresh herbs like parsley or chives (optional, for garnish)

Instructions

  • Preheat Oven:
  • Preheat your oven to 375°F (190°C). You can also use a toaster oven for convenience.
  • Prepare the English Muffins:
  • Split the English muffins in half and place them on a baking sheet, cut side up. Toast the muffin halves in the oven for 5-7 minutes, until golden and lightly crispy.
  • Cook the Eggs:
  • While the muffins are toasting, heat a nonstick skillet over medium heat and melt the butter or add olive oil.
  • Crack the eggs into the skillet, one at a time. Cook to your desired doneness (sunny side up, scrambled, or over-easy).
  • Season with salt, pepper, and garlic powder if desired. You can also add cooked breakfast sausage or bacon to the skillet to warm through.
  • Assemble the Pizzas:
  • Once the English muffins are toasted, remove them from the oven.
  • Top each muffin half with a little shredded cheese. If you’re adding vegetables (like bell peppers or mushrooms), layer those on top of the cheese.
  • Place one cooked egg on top of each muffin half.
  • Bake the Breakfast Pizzas:
  • Return the muffins to the oven for another 5-7 minutes or until the cheese is melted and bubbly, and the egg is cooked to your liking.
  • Serve and Garnish:
  • Remove the English muffin pizzas from the oven and let them cool for a moment.
  • Garnish with fresh herbs like parsley or chives if desired. Serve immediately.

Notes

  • Feel free to customize these breakfast pizzas with your favorite toppings such as ham, spinach, or tomatoes.
  • You can use pre-cooked sausage or bacon for a quicker option, or add other breakfast vegetables like onions or spinach.
  • If you like a crispy crust, you can broil the muffins for 1-2 minutes after baking.
