Start your morning with these quick and customizable English Muffin Breakfast Pizzas! Crisped English muffins are topped with eggs, cheese, and your favorite breakfast toppings for a fun, hearty, and delicious breakfast. Perfect for busy mornings, brunch, or weekend treats.

Ingredients

  • 4 English muffins, split
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or mozzarella)
  • 4 slices cooked bacon, sausage, or ham (optional)
  • ½ cup diced bell peppers, onions, or tomatoes (optional)
  • Salt & pepper, to taste
  • Cooking spray or a little butter
  • Optional Toppings:
  • Fresh spinach or arugula
  • Hot sauce or salsa
  • Chopped fresh herbs

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toast English muffins lightly in a toaster or oven. Place on the prepared baking sheet.
  3. Cook eggs: You can either fry, scramble, or bake eggs. For baked eggs: crack one egg onto each muffin half, seasoning with salt and pepper.
  4. Add toppings: Sprinkle shredded cheese, cooked meat, and vegetables evenly over each muffin.
  5. Bake: Place the sheet in the oven for 8–10 minutes, or until the cheese is melted and eggs are set to your preference.
  6. Serve: Remove from oven, add any fresh toppings, and enjoy warm.
