Ingredients
1 cup of all-purpose flour
1/2 cup of rolled oats
1/4 cup of brown sugar
1/2 cup of unsalted butter, melted
1/2 cup of raspberry jam or preserves
Instructions
Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
In a medium bowl, combine the flour, oats, and brown sugar.
Add the melted butter to the dry ingredients and stir until the mixture resembles crumbly dough.
Press about two-thirds of the dough mixture into the bottom of the prepared pan to form the crust.
Spread the raspberry jam evenly over the crust layer.
Sprinkle the remaining crumb mixture on top of the raspberry jam.
Bake for 20-25 minutes, or until the top is golden brown and the jam is bubbly.
Allow to cool completely before cutting into squares.
Notes
For a variation, try using strawberry or blueberry jam instead of raspberry.
These bars store well in an airtight container at room temperature for up to 5 days.
For an extra touch, dust with powdered sugar before serving.
