1 lb elbow macaroni
2 tbsp butter
2 tbsp all-purpose flour
2 cups whole milk
1 cup half-and-half
3 cups shredded cheddar cheese
1 cup shredded Gruyère cheese
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp mustard powder (optional)
1/2 tsp smoked paprika (optional)
Preheat your oven to 350°F (175°C).
Cook the macaroni according to the package instructions until al dente (about 4-5 minutes). Drain and set aside.
In a large pot, melt butter over medium heat. Whisk in flour and cook for about 1 minute.
Gradually add milk and half-and-half, whisking continuously. Bring to a simmer and cook until the sauce thickens.
Remove from heat and stir in shredded cheddar and Gruyère cheeses until melted and smooth.
Season with salt, pepper, garlic powder, and optional spices.
Combine the cooked pasta and cheese sauce in a large bowl. Mix well.
Transfer half of the mac and cheese into a greased baking dish, sprinkle with additional shredded cheese, then top with the remaining mac and cheese and cheese.
Bake for 25-30 minutes, until bubbly and golden. Optionally, broil for 2-3 minutes to get a crispy top.
For a stovetop-only version, skip the baking step.
Try a crunchy topping made with panko breadcrumbs or crushed Ritz crackers mixed with melted butter for added texture.
