Ingredients

1 lb elbow macaroni

2 tbsp butter

2 tbsp all-purpose flour

2 cups whole milk

1 cup half-and-half

3 cups shredded cheddar cheese

1 cup shredded Gruyère cheese

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp mustard powder (optional)

1/2 tsp smoked paprika (optional)

Instructions

  • Preheat your oven to 350°F (175°C).

  • Cook the macaroni according to the package instructions until al dente (about 4-5 minutes). Drain and set aside.

  • In a large pot, melt butter over medium heat. Whisk in flour and cook for about 1 minute.

  • Gradually add milk and half-and-half, whisking continuously. Bring to a simmer and cook until the sauce thickens.

  • Remove from heat and stir in shredded cheddar and Gruyère cheeses until melted and smooth.

  • Season with salt, pepper, garlic powder, and optional spices.

  • Combine the cooked pasta and cheese sauce in a large bowl. Mix well.

  • Transfer half of the mac and cheese into a greased baking dish, sprinkle with additional shredded cheese, then top with the remaining mac and cheese and cheese.

  • Bake for 25-30 minutes, until bubbly and golden. Optionally, broil for 2-3 minutes to get a crispy top.

Notes

  • For a stovetop-only version, skip the baking step.

  • Try a crunchy topping made with panko breadcrumbs or crushed Ritz crackers mixed with melted butter for added texture.
