These Feta and Spinach Puff Pastry Bites are easy-to-make, flaky appetizers filled with a creamy mixture of spinach, feta cheese, and ricotta, perfect for parties or snacking.

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 4 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup ricotta cheese
  • 1 large egg
  • 1/4 teaspoon ground black pepper
  • 1 (17.3 ounce) package frozen puff pastry, thawed
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add garlic and cook for about 30 seconds until fragrant.
  3. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the spinach mixture, feta cheese, ricotta cheese, egg, and black pepper. Mix well.
  5. Unfold the puff pastry sheets and cut each sheet into 9 equal squares (18 squares total).
  6. Place about 1 tablespoon of the spinach filling in the center of each square.
  7. Fold the corners of each square into the center and pinch to seal. Place on the prepared baking sheet.
  8. Whisk together 1 tablespoon water and a little egg (optional) to create an egg wash, then brush over the tops of the pastries.
  9. Bake for 20-25 minutes, or until puffed and golden brown.
  10. Remove from oven and let cool slightly before serving.

Notes

  • You can use frozen spinach; just thaw and drain it thoroughly.
  • These can be made ahead and stored in the refrigerator before baking.
  • Serve warm or at room temperature.
