Ingredients

For the Chicken:

  • 2 chicken breasts (boneless, skinless)
  • 1 tablespoon olive oil

  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)

  • 2 packs of ramen noodles (discard the seasoning packet)
  • 1 tablespoon sesame oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 bell pepper, thinly sliced
  • 1/2 cup spinach or other leafy greens (optional)
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha (adjust to taste)

For the Creamy Garlic Sauce:

  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the Chicken:

    • Season the chicken breasts with paprika, garlic powder, chili powder, cayenne, salt, and pepper.
    • Heat olive oil in a skillet over medium-high heat. Cook the chicken breasts for 5-6 minutes on each side or until cooked through. Remove from heat and slice thinly.
  2. Prepare the Ramen:

    • Cook the ramen noodles according to the package instructions. Drain and set aside.
    • In a large pan, heat sesame oil over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté for 3-4 minutes until softened.
    • Add chicken broth, soy sauce, and sriracha. Bring to a simmer, then add the spinach (if using) and cooked ramen noodles. Stir to combine and heat through.
  3. Make the Creamy Garlic Sauce:

    • In a small saucepan, melt the butter over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.
    • Pour in the heavy cream, stir in Parmesan cheese, and simmer for 3-4 minutes until the sauce thickens. Season with lemon juice, salt, and pepper.
  4. Assemble the Dish:

    • Divide the ramen mixture between bowls. Top with sliced chicken and drizzle generously with the creamy garlic sauce.
