Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • 1 refrigerated pie crust
  • 1 cup heavy cream
  • 1/2 cup mayonnaise
  • 1/2 cup grated cheddar cheese
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons butter
  • 1/4 cup chopped green onions
  • 1/4 cup chopped red bell pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Old Bay seasoning
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour
  • 1/2 cup panko breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet, melt the butter over medium heat. Add the green onions, red bell pepper, and garlic powder, and sauté until softened, about 3-4 minutes.
  3. Add the shrimp to the skillet and cook until they are just pink and cooked through, about 4-5 minutes. Remove from heat and set aside.
  4. In a large bowl, whisk together the heavy cream, mayonnaise, cheddar cheese, lemon juice, Old Bay seasoning, salt, and pepper.
  5. Stir in the cooked shrimp mixture. Sprinkle in the flour and mix until everything is evenly combined.
  6. Pour the shrimp mixture into the prepared pie crust.
  7. If desired, sprinkle panko breadcrumbs over the top for extra texture.
  8. Bake for 25-30 minutes or until the filling is set and the crust is golden brown.
  9. Allow to cool for a few minutes before slicing and serving.

Notes

  • For extra flavor, you can add a teaspoon of Dijon mustard to the filling.
  • To make this recipe lighter, you can substitute half of the heavy cream with whole milk.
  • You can also add other seafood like crab meat for a mixed seafood pie.
  • For a crispier crust, you can blind bake the crust for 5-7 minutes before filling it.
