Ingredients

  • 2 medium apples (peeled, cored, and chopped)
  • 1 cup ground almonds (almond flour)
  • 1/2 cup almond meal
  • 1/2 cup maple syrup or honey
  • 3 large eggs
  • 1/4 cup coconut oil (melted)
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • Optional: sliced almonds for topping

Instructions

  • Preheat your oven to 350°F (175°C). Grease an 8-inch (20 cm) cake pan with coconut oil or line it with parchment paper.
  • In a medium bowl, whisk together the ground almonds, almond meal, cardamom, baking soda, and salt.
  • In another bowl, beat the eggs with the maple syrup (or honey) and vanilla extract until well combined.
  • Add the melted coconut oil to the wet ingredients and mix again.
  • Fold in the dry ingredients into the wet mixture until just combined.
  • Gently fold in the chopped apples to the batter.
  • Pour the batter into the prepared cake pan and spread it evenly.
  • Optional: top with sliced almonds for added texture and flavor.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
