These fluffy cinnamon rolls are soft, tender, and filled with a gooey cinnamon-sugar filling, then topped with a rich and creamy glaze. Perfect for breakfast or a sweet treat any time of day.

Ingredients

  • 1 cup warm milk (110°F)
  • 2 1/4 tsp instant yeast
  • 1/2 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1/2 cup unsalted butter, softened (for filling)
  • 1 cup brown sugar, packed (for filling)
  • 2 tbsp ground cinnamon (for filling)
  • 4 oz cream cheese, softened (for glaze)
  • 1/4 cup unsalted butter, softened (for glaze)
  • 11 1/2 cups powdered sugar (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • 12 tbsp milk (for glaze, as needed for consistency)

Instructions

  1. In a large bowl, mix warm milk and yeast. Let sit for 5 minutes until foamy.
  2. Add sugar, melted butter, eggs, flour, and salt. Mix until a dough forms.
  3. Knead the dough for 5–7 minutes until smooth and elastic. Let rise in a greased bowl for about 1 hour or until doubled in size.
  4. Roll out the dough into a rectangle on a floured surface.
  5. Spread softened butter over the dough, then sprinkle with brown sugar and cinnamon.
  6. Roll up the dough tightly and cut into 12 rolls.
  7. Place rolls in a greased 9×13-inch baking dish. Cover and let rise for another 30–45 minutes.
  8. Preheat oven to 350°F (175°C). Bake rolls for 20–25 minutes or until golden brown.
  9. While baking, prepare the glaze by beating cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
  10. Spread glaze over warm rolls before serving.

Notes

  • Make sure the milk is warm, not hot, to avoid killing the yeast.
  • You can prepare the rolls the night before and bake the next morning.
  • Add chopped nuts or raisins to the filling for variety.
