This Freakin Fantastic Fried Rice is quick, easy, and packed with flavor! Made with fluffy rice, savory soy sauce, scrambled eggs, and plenty of veggies, it’s the perfect way to turn leftover rice into a restaurant-style dish at home. Add chicken, shrimp, or tofu for a complete meal that everyone will rave about!

Ingredients

  • 3 cups cooked, chilled rice (day-old rice works best)
  • 2 tbsp vegetable oil (divided)
  • 2 eggs, lightly beaten
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn, or bell peppers)
  • 3 green onions, sliced
  • 3 tbsp soy sauce (or to taste)
  • 1 tbsp oyster sauce (optional, for depth)
  • 1 tsp sesame oil
  • Salt & black pepper, to taste
  • Optional Add-ins:
  • Cooked chicken, shrimp, pork, or tofu
  • Chili flakes or sriracha for heat

Instructions

  • Scramble eggs: Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add eggs, scramble, then remove from pan.
  • Sauté aromatics: Add remaining oil. Cook onion and garlic until fragrant.
  • Cook veggies: Stir in mixed vegetables and cook until just tender.
  • Add rice: Toss in chilled rice, breaking up clumps with a spatula. Stir-fry for 3–4 minutes until heated through.
  • Season: Add soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Stir well.
  • Finish: Return scrambled eggs and green onions to the pan. Mix everything together.
  • Serve: Dish up hot with extra soy sauce or chili on the side.

Notes

  • Always use day-old rice for the best texture. Fresh rice can get mushy.
  • For protein, toss in diced chicken, shrimp, or tofu.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Great with a fried egg on top for extra richness!
