This French Onion Chicken Rice Casserole combines the savory flavors of caramelized onions, tender chicken, and creamy rice for a hearty and comforting meal. Easy to prepare and full of flavor, this casserole is perfect for family dinners or meal prepping!

Ingredients

  • 1 lb (about 2) chicken breasts, boneless and skinless
  • 2 cups long-grain white rice, uncooked
  • 1 large onion, sliced
  • 2 cups French onion soup (can be canned or homemade)
  • 1 ½ cups chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 2 tbsp butter
  • ½ tsp garlic powder
  • ½ tsp thyme
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10 minutes. Stir frequently to avoid burning.
  • Add the chicken breasts to the skillet, season with salt, pepper, garlic powder, and thyme, and cook for about 4-5 minutes on each side until lightly browned. Remove chicken and set aside.
  • In the same skillet, melt the butter and add the uncooked rice. Stir for 1-2 minutes until the rice is lightly toasted.
  • In a 9×13-inch casserole dish, combine the rice mixture, French onion soup, and chicken broth. Stir to combine.
  • Place the chicken breasts on top of the rice mixture. Cover the dish with foil and bake for 35 minutes.
  • Remove the foil and sprinkle shredded mozzarella cheese over the chicken. Continue baking for an additional 10 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let it rest for a few minutes before serving.

Notes

  • For added flavor, you can sprinkle some crispy fried onions on top before serving.
  • This casserole can be made ahead of time and refrigerated for up to 2 days before baking.
  • You can substitute the chicken breasts with thighs for a juicier option.
