Ingredients

  • 4 cups beef broth
  • 2 tablespoons butter
  • 3 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • Salt and pepper, to taste
  • 1 cup shredded Gruyère or Swiss cheese
  • Optional: French bread croutons or toasted baguette slices for serving

Instructions

  • In a large skillet or saucepan, melt butter over medium heat. Add onions and cook slowly, stirring occasionally, until deeply caramelized and golden brown (about 30-40 minutes).
