Ingredients

  • For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • For the Strawberry Filling:
  • 1 cup fresh strawberries, chopped
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • For the Sandwiches:
  • 8 slices of white or brioche bread (thick-cut preferred)
  • 1/2 cup all-purpose flour (for dredging)
  • 2 large eggs, beaten
  • 1/2 cup breadcrumbs (panko breadcrumbs work well)
  • 1 teaspoon cinnamon (optional)
  • 1/4 cup unsalted butter, for frying
  • Powdered sugar, for dusting (optional)

Instructions

  • Prepare the Cheesecake Filling: In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Set aside.
  • Prepare the Strawberry Filling: In a small bowl, toss the chopped strawberries with granulated sugar and lemon juice. Let the mixture sit for about 10 minutes to allow the strawberries to release their juices.
  • Assemble the Sandwiches: Spread a generous layer of the cheesecake filling onto one slice of bread. Top with a spoonful of the strawberry filling. Place another slice of bread on top to form a sandwich. Repeat for all sandwiches.
  • Coat the Sandwiches: Dredge each sandwich in flour, ensuring it’s fully coated. Dip the sandwich into the beaten eggs, allowing any excess egg to drip off. Finally, coat the sandwich in breadcrumbs (and cinnamon if desired).
  • Fry the Sandwiches: Heat butter in a large skillet over medium heat. Once the butter is melted and hot, carefully place the sandwiches into the skillet. Fry for 2-3 minutes on each side or until golden brown and crispy.
  • Serve: Remove the fried sandwiches from the skillet and place them on a paper towel-lined plate to absorb any excess oil. Dust with powdered sugar and serve warm.

Notes

  • For a more indulgent treat, drizzle with chocolate sauce or serve with extra fresh strawberries on the side.
  • You can use other fruits like raspberries or blueberries for the filling if desired.
  • These sandwiches are best enjoyed fresh but can be stored in an airtight container for 1-2 days.
