Friss-Dich-Dumm Suppe is a creamy, hearty German soup made with ground meat, vegetables, and cheese. It’s easy to prepare in one pot and perfect for family meals, leftovers, or meal prep.

Ingredients

  • 500 g ground meat (beef or mixed)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 1 red bell pepper, diced
  • 1 leek, sliced into rings
  • 1 liter vegetable broth
  • 200 ml heavy cream
  • 200 g processed cheese or cream cheese
  • 1 tbsp Worcestershire sauce (optional)
  • Salt, pepper, and a pinch of nutmeg to taste
  • 12 tbsp oil for sautéing

Instructions

  1. Heat oil in a large pot over medium heat and sauté the ground meat until browned and crumbly.
  2. Add chopped onion and garlic; cook until translucent.
  3. Stir in carrots, bell pepper, and leek. Cook for about 5 minutes until slightly softened.
  4. Pour in the vegetable broth and bring the soup to a boil.
  5. Reduce heat to low, then stir in cream and processed cheese until smooth and creamy.
  6. Season with Worcestershire sauce (if using), salt, pepper, and nutmeg.
  7. Let the soup simmer gently for 10–15 minutes to blend the flavors.
  8. Serve hot with crusty bread or a green salad.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • The soup can be frozen after cooling completely.
  • To reheat, warm gently on the stove or microwave in portions.
  • Flavors improve after a day – great for meal prep.
  • Use gluten-free broth and cheese for a gluten-free version.
