Ingredients

  • 2 cups fresh pineapple, chopped
  • 1 cup coconut milk (or regular milk for a lighter version)
  • 1/2 cup orange juice
  • 1/2 cup mango, chopped
  • 1/2 cup strawberries, chopped
  • 1/4 cup lime juice (about 2 limes)
  • 12 tbsp honey or agave syrup (optional, depending on sweetness preference)
  • 1/4 tsp ground ginger (optional, for extra warmth)
  • Fresh mint leaves for garnish (optional)

Instructions

  • In a blender or food processor, combine the chopped pineapple, coconut milk, orange juice, mango, strawberries, lime juice, and honey/agave syrup.
  • Blend until smooth, adding more coconut milk or water if the mixture is too thick.
  • Taste and adjust sweetness, adding more honey/agave if necessary or a little more lime juice if you prefer it more tangy.
  • If you want a slightly spiced version, add the ground ginger and blend again.
  • Transfer the soup to a bowl or pitcher, and chill in the refrigerator for at least 1-2 hours before serving.
  • Once chilled, serve the soup in bowls or cups and garnish with fresh mint leaves if desired.

  • This soup can be made ahead of time and stored in the fridge for up to 3 days.
  • For a smoother texture, you can strain the soup through a fine-mesh sieve to remove any pulp.
