Ingredients

For the Cookies:

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

For the Ganache Topping:

  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips

For Decoration:

  • ¼ cup rainbow candy-coated chocolate chips (like Cosmic Brownie sprinkles)

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Make the cookie dough: In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract, mixing well.
  • Combine dry ingredients: In another bowl, sift together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture, stirring until fully combined.
  • Scoop and bake: Using a cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 8-10 minutes or until the cookies are set but still soft.
  • Cool the cookies: Allow them to rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
