Ingredients
- 1 package (around 473g) pre-made chocolate chip cookie dough
- 1 cup semi-sweet chocolate chips (divided)
- ½ cup heavy cream
- ½ cup softened unsalted butter
- ¼ cup granulated sugar
- ⅓ cup mini M&Ms (candy-coated milk chocolate minis)
- Powdered sugar, for dusting
Instructions
- Prepare the Pan and Preheat Oven: Preheat your oven to 375°F (190°C). Line a jelly roll pan (approximately 15×10 inches) with parchment paper.
- Spread the Dough: Spread the cookie dough evenly in the prepared pan. Use a spatula to gently press it out as it’s thick.
- Bake the Cookie Base: Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let it cool slightly on a wire rack.
- Make the Fudge Filling: While the cookie base cools, make the fudge filling. In a saucepan over medium heat, combine heavy cream and ½ cup of chocolate chips. Stir constantly until the chocolate melts and the mixture becomes smooth. Remove from heat and stir in the butter until well incorporated. Let the mixture cool slightly.
- Spread the Filling: Once the cookie layer is cool enough to handle but still warm, spread the fudge filling evenly over the entire surface.
- Add the Funfetti: Sprinkle the remaining ½ cup of chocolate chips and the mini M&Ms over the filling.
- Roll the Cookie Dough: Using a dusting of powdered sugar to prevent sticking, carefully roll up the warm cookie dough from the shorter end, jelly roll style.
- Chill the Roll: Place the roll seam side down on a serving plate. Cover loosely with plastic wrap and refrigerate for at least 2 hours, or until chilled and set.
