Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter, divided
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish with nonstick spray.
  2. Season chicken breasts generously with salt and pepper on both sides.
  3. In a skillet over medium heat, melt 2 tablespoons of butter. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Stir in soy sauce and lemon juice. Let the mixture bubble briefly, then remove from heat.
  5. Arrange seasoned chicken breasts in the prepared baking dish and pour the garlic sauce evenly over the top.
  6. Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Melt the remaining 2 tablespoons of butter and drizzle over the chicken before serving. Garnish with chopped parsley.

Notes

  • Add vegetables like broccoli, green beans, or cherry tomatoes to the baking dish for a complete one-pan meal.
  • Sprinkle grated Parmesan cheese over the chicken before baking for a cheesy variation.
  • Chicken thighs can be substituted for extra juiciness; adjust cooking time as needed.
  • Add a pinch of red pepper flakes for mild heat.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.
  • Reheat covered in a 325°F oven or in the microwave in short intervals with extra sauce to maintain moisture.
