Ingredients

  • 1 lb ground turkey
  • 1 small head of cauliflower (or 4 cups cauliflower florets)

  • 1 tsp dried thyme (optional)
  • 1 tsp paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Cauliflower: Cut the cauliflower into small florets. If you prefer a faster cook time, you can pulse the cauliflower florets in a food processor until it resembles rice.
  • Cook the Ground Turkey: Heat olive oil in a large skillet over medium heat. Add the ground turkey, breaking it up with a spoon, and cook for about 5-7 minutes until browned and fully cooked through. Season with salt and pepper to taste. Remove the turkey from the skillet and set aside.
  • Cook the Cauliflower: In the same skillet, add butter and let it melt over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Sauté the Cauliflower: Add the cauliflower florets to the skillet, seasoning with salt, pepper, and any other spices you like. Stir occasionally and cook for 5-7 minutes until tender and slightly golden.
  • Combine and Serve: Add the cooked ground turkey back into the skillet with the cauliflower. Stir everything together and cook for another 2-3 minutes. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
