These garlic butter roasted mushrooms are juicy, flavorful, and perfectly caramelized with a rich garlic herb butter. A simple side dish that pairs well with almost any meal.

Ingredients

  • 500 g mushrooms (button or cremini)
  • 3 tbsp butter, melted
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried thyme or 2 tsp fresh thyme
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Clean mushrooms and trim stems if needed.
  3. In a bowl, toss mushrooms with melted butter, olive oil, garlic, thyme, salt, and pepper.
  4. Spread mushrooms evenly on a baking tray.
  5. Roast for 15–20 minutes, stirring halfway through, until tender and browned.
  6. Remove from oven and sprinkle with fresh parsley before serving.

Notes

  • Use any mushroom variety like cremini, button, or portobello.
  • Add a squeeze of lemon juice for brightness.
  • Store leftovers in the fridge for up to 3 days.
  • Reheat in a pan to retain texture.
