Ingredients

  • 4 medium sweet potatoes, peeled and cubed
  • 1/4 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. In a large bowl, combine the melted butter, minced garlic, thyme, salt, and black pepper.
  4. Add the sweet potato cubes to the bowl and toss to coat them evenly with the garlic butter mixture.
  5. Spread the coated sweet potatoes in a single layer on the prepared baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and golden brown on the edges.
