Seared to golden perfection and bathed in a rich garlic butter sauce, these Garlic Butter Scallops are a quick, elegant, and restaurant-quality dish perfect for both special occasions and busy weeknights.

Ingredients

  • 1 lb sea scallops
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Pat the scallops dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add scallops in a single layer, leaving space between each. Sear for 2–3 minutes per side without moving them, until a golden crust forms.
  4. Remove scallops and set aside.
  5. Lower the heat to medium. Add butter and minced garlic to the skillet and sauté for about 1 minute until fragrant.
  6. Return scallops to the pan and spoon garlic butter over them. Cook for another 30 seconds.
  7. Remove from heat, garnish with chopped parsley and a squeeze of lemon juice if desired. Serve immediately.

Notes

  • Ensure scallops are very dry before searing to achieve a golden crust.
  • Use a stainless steel or cast iron skillet for best sear results.
  • Avoid overcooking scallops to prevent a rubbery texture.
  • Add a splash of dry white wine for extra depth of flavor.
  • Scallops do not require marinating and are best cooked shortly after seasoning.
