This Garlic Butter Shrimp Scampi Lasagna combines succulent shrimp, rich garlic butter sauce, and layers of cheesy lasagna for a decadent twist on a classic favorite. Perfect for a cozy dinner or special occasion, this creamy, flavorful dish will become a family favorite.

Ingredients

  • 12 lasagna noodles (regular or no-boil)
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 6 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup dry white wine (or chicken broth)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 egg
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  • Prepare the Lasagna Noodles:
  • Cook the lasagna noodles according to the package directions. Drain and set aside.
  • Cook the Shrimp:
  • Heat olive oil in a large skillet over medium heat.
  • Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from the pan and set aside.
  • Make the Garlic Butter Sauce:
  • In the same skillet, melt the butter over medium heat.
  • Add minced garlic and cook for about 1 minute until fragrant.
  • Stir in red pepper flakes (if using) and white wine (or chicken broth). Cook for 2-3 minutes until the liquid reduces slightly.
  • Add the heavy cream and simmer for another 3-4 minutes until thickened.
  • Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  • Prepare the Cheese Filling:
  • In a separate bowl, combine ricotta cheese, egg, mozzarella cheese, and chopped parsley. Mix until smooth.
  • Assemble the Lasagna:
  • Preheat the oven to 375°F (190°C).
  • Spread a thin layer of garlic butter sauce on the bottom of a 9×13-inch baking dish.
  • Place a layer of lasagna noodles over the sauce.
  • Spread a layer of the ricotta cheese mixture over the noodles.
  • Add a layer of cooked shrimp and drizzle with more garlic butter sauce.
  • Repeat the layers: noodles, ricotta mixture, shrimp, and sauce.
  • Finish with a final layer of noodles, sauce, and sprinkle with additional mozzarella cheese.
  • Bake:
  • Cover the lasagna with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  • Serve:
  • Let the lasagna cool for a few minutes before slicing. Garnish with extra parsley if desired.

Notes

  • If using no-boil noodles, make sure they are fully covered in sauce to soften during baking.
  • You can substitute the shrimp with other seafood or chicken if desired.
  • Add extra garlic and parsley for more flavor.
