Ingredients

  • For the Steak Bites:
  • 1 lb sirloin steak (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp garlic powder
  • 1 tbsp fresh parsley (for garnish)
  • For the Potatoes:
  • 1 lb baby potatoes (halved)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 tsp dried thyme (or rosemary)
  • For the Garlic Butter Sauce:
  • 4 tbsp butter (divided)
  • 4 cloves garlic (minced)
  • 1 tbsp fresh parsley (chopped)
  • 1 tbsp lemon juice (optional)

Instructions

  • Prepare the Potatoes:
  • Preheat the oven to 400°F (200°C).
  • Place halved baby potatoes on a baking sheet. Drizzle with 2 tbsp olive oil, salt, pepper, paprika, and thyme. Toss to coat.
  • Roast in the oven for 25-30 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside.
  • Cook the Steak Bites:
  • While the potatoes are roasting, heat 2 tbsp olive oil in a large skillet over medium-high heat.
  • Season the steak pieces with salt, pepper, and garlic powder.
  • Once the skillet is hot, add the steak bites in a single layer. Cook for 2-3 minutes per side, until browned and cooked to your desired doneness. Remove the steak bites from the skillet and set aside.
  • Make the Garlic Butter Sauce:
  • In the same skillet, reduce the heat to medium and add 2 tbsp butter. Once melted, add minced garlic and cook for 1 minute until fragrant.
  • Add the remaining 2 tbsp butter and let it melt, stirring to combine with the garlic. If desired, add a splash of lemon juice for extra brightness.
  • Return the cooked steak bites to the skillet and toss to coat them in the garlic butter sauce.
  • Combine and Serve:
  • Remove the crispy roasted potatoes from the oven and transfer them to a plate.
  • Serve the garlic butter steak bites over or alongside the crispy potatoes, garnishing with fresh parsley for added flavor and color.

Notes

  • For extra crispy potatoes, you can preheat the baking sheet in the oven before adding the potatoes.
  • You can swap the sirloin steak for ribeye or filet mignon for a more luxurious dish.
  • If you like your steak with a little more sauce, feel free to add extra butter and garlic to the skillet.
