Tender zucchini skewers brushed with rich garlic butter and grilled until lightly charred. This simple vegetable side dish delivers fresh, savory flavor and pairs perfectly with any barbecue or summer meal.

Ingredients

  • 4 medium zucchini
  • 4 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup bell peppers, chopped
  • 1 cup mushrooms, halved

Instructions

  1. Preheat the grill to medium heat, about 350°F (175°C).
  2. In a small bowl, mix the melted butter, minced garlic, dried oregano, salt, and black pepper until well combined.
  3. Slice the zucchini into thick rounds and cut the bell peppers into large chunks.
  4. Thread the zucchini, bell peppers, and mushrooms onto skewers, leaving a small space between each piece for even cooking.
  5. Brush the vegetable skewers generously with the garlic butter mixture, coating all sides.
  6. Place the skewers on the grill and cook for 10–15 minutes, turning occasionally, until the vegetables are tender and lightly charred.
  7. Remove from the grill and drizzle with any remaining garlic butter before serving warm.

Notes

  • If using wooden skewers, soak them in water for 20–30 minutes before grilling to prevent burning.
  • You can substitute yellow squash for some of the zucchini for extra color and flavor.
  • Serve alongside grilled meats, rice dishes, or salads for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in a skillet or oven.
