Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups corn kernels (fresh, canned, or frozen)
  • 3 tablespoons butter, divided
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Pat the shrimp dry and season with salt, black pepper, and paprika.
  2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat.
  3. Add the shrimp and cook for 1–2 minutes per side until pink and opaque. Remove and set aside.
  4. In the same skillet, melt the remaining butter and add minced garlic. Cook for about 30 seconds.
  5. Add the corn and cook for 3–4 minutes until heated through.
  6. Stir in lemon juice and red pepper flakes if using.
  7. Return the shrimp to the skillet and toss to coat in the garlic butter sauce.
  8. Garnish with fresh parsley and serve with lemon wedges.

Notes

  • Use frozen shrimp by thawing completely and patting dry before cooking.
  • Add vegetables like bell peppers or zucchini for a more filling meal.
  • For extra richness, stir in grated Parmesan or a splash of cream.
  • Serve over rice, pasta, or with crusty bread.
  • Reheat gently to avoid overcooking the shrimp.
