If you’re looking for a cozy and flavorful twist on traditional meatloaf, this Garlic Parmesan Chicken Meatloaf is the ultimate comfort food. Juicy ground chicken is mixed with breadcrumbs, Parmesan cheese, and garlic, then baked to perfection with a savory glaze. It’s hearty, cheesy, and absolutely delicious served with mashed potatoes or roasted veggies.

Ingredients

  • 1 1/2 lbs ground chicken
  • 1 cup breadcrumbs (Italian-style or plain with seasoning)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 eggs, lightly beaten
  • 1/4 cup milk
  • 3 garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • For the glaze:
  • 1/4 cup ketchup
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder

Instructions

  • Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, eggs, milk, garlic, Italian seasoning, salt, pepper, and parsley. Mix gently until just combined.
  • Shape the mixture into a loaf and place in the prepared pan.
  • In a small bowl, whisk together ketchup, Parmesan, and garlic powder. Spread the glaze evenly on top of the meatloaf.
  • Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let rest for 10 minutes before slicing and serving.

Notes

  • Use ground turkey instead of chicken if preferred.
  • Add spinach or shredded zucchini into the mixture for extra veggies.
  • Leftovers make amazing meatloaf sandwiches!
