Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup milk (dairy or plant-based)
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for greasing the pan)
  • Optional: 1/2 teaspoon red pepper flakes (for heat)

Instructions

  • Preheat the oven to 375°F (190°C). Grease a baking pan with olive oil or line it with parchment paper.
  • In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, milk, egg, parsley, Italian seasoning, salt, and pepper.
  • Mix everything together until fully combined, but avoid overmixing to keep the meatloaf tender.
  • Transfer the mixture into the prepared baking pan and shape it into a loaf.
  • Bake for 40-45 minutes, or until the meatloaf reaches an internal temperature of 165°F (74°C) and is cooked through.
  • Once done, remove from the oven and let it rest for 5 minutes before slicing and serving.
