Ingredients
3 pounds of baby red potatoes, cut in half
3 tablespoons of olive oil
4 finely minced garlic cloves
2 teaspoons of sea salt
½ teaspoon of ground black pepper
1 teaspoon of dry oregano
1 teaspoon of dry basil
½ cup of grated parmesan cheese
Chopped fresh parsley, for garnish
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, mix the potatoes with olive oil, garlic, salt, pepper, oregano, basil, and parmesan cheese until evenly coated.
Spread the potatoes cut-side down on a baking sheet lined with parchment paper or foil.
Roast in the oven for 25 to 30 minutes or until golden brown and crispy.
Remove from the oven and garnish with chopped fresh parsley before serving.
Notes
Use freshly grated Parmesan for the best flavor and texture.
Flip potatoes halfway through roasting for extra crispiness.
These are best served fresh but can be reheated in an oven to retain crispiness.
