Ingredients
1 lb chicken breast, cubed
Salt and pepper, to taste
1 tbsp olive oil
3 cups broccoli florets
1 lb cheese tortellini
3 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 cup chicken broth
Red pepper flakes (optional)
Instructions
Season the chicken with salt and pepper.
In a large skillet over medium heat, heat olive oil and cook the chicken until golden and cooked through. Remove from skillet and set aside.
In the same skillet, melt the butter. Add garlic and sauté for 1 minute until fragrant.
Add the chicken broth and heavy cream, stirring to combine.
Gradually add the Parmesan cheese, stirring until the sauce is smooth and creamy.
Meanwhile, cook the tortellini according to package instructions. In the last 2 minutes of cooking, add broccoli to the pot to blanch. Drain and set aside.
Add the chicken, tortellini, and broccoli to the skillet with the sauce. Stir to combine and heat through.
Season with red pepper flakes if desired, and serve warm.
Notes
Use pre-cooked or rotisserie chicken to save time.
Fresh or frozen broccoli can be used.
Adjust red pepper flakes to your spice preference.
