Crispy on the outside, fluffy on the inside—these Garlic Roasted Potatoes are the ultimate side dish, seasoned to perfection with fresh garlic, herbs, and olive oil. A simple, crowd-pleasing recipe for any meal.

Ingredients

  • 2 lbs (900g) baby potatoes or Yukon Gold, halved or quartered
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or rosemary)
  • 1 teaspoon paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 425°F (220°C).
  • Prep the potatoes: Wash and dry the potatoes. Cut them into uniform pieces.
  • Season: In a large bowl, toss the potatoes with olive oil, minced garlic, salt, pepper, thyme, and paprika until evenly coated.
  • Roast: Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast for 25–30 minutes, flipping halfway, until golden and crispy.
  • Serve: Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes, then pat dry before roasting.
  • Add Parmesan cheese during the last 5 minutes of roasting for a cheesy twist.
  • Great as a side for chicken, steak, or fish.
